For the sake of saving time, and not having to feel pressed about spoilage, I’ve used frozen and fairly non-perishable products for this recipe. The choice is not simply for the sake of being more expeditious and given the levity to cook it when you'd like, it also serves as a technique in executing this 15-minute frozen shrimp and chorizo dish.
Another reason why this recipe is so good, is that it uses just one pan. Which means less cleaning up to do after the meal.
Also, who wants to spend the first 15 minutes of preparing the dish peeling and deveining shrimp? I certainly don't, especially when already hungry.

Heat Olive oil in a pan over medium heat-high
When the pan and oil are hot, add chopped dried chorizo.
Once chorizo browns, add frozen shrimp to the pan, with a pinch of salt and pepper, cover pan (cook for 5 minutes). Shrimp will naturally poach as it defrosts, and chorizo will act as seasoning.
When shrimp turns mildly pink, add frozen spinach (1 cup) with a pinch of salt and pepper, then cover the pan until spinach thaws ( 3-5 minutes).
Add the juice of one (1) lemon, with 2 heaping tablespoons of butter.
Toss ingredients in the pan with lid off, and let some liquid reduce (5-minutes)
Serve with spicy Italian Bomba sauce (optional) or red pepper flakes.
Notes
I've added spinach to round out a meal but you can use other greens you prefer or, it can easily be left out.
It can be served over rice, pasta, or mashed potatoes. Or just buy good bread to dip into the sauce.
Excellent with fizzy white wine, like a Vinho Verde.

This dish will impress every time. It also helps the eater transport themselves to a nearby Mediterranean of choice. For larger gatherings, just scale recipe to fit size of the group and which makes easy weeknight meal for all.
