
Dear Reader,
Easy Weeknight Meals was inspired by the busy people of New York City. My family and I are among these people and after a long day at work, the time in which we look forward to most is that at the dinner table enjoying a home-cooked meal together.
There are those who belong to the slow food movement as to counter the popularity of fast-food. In truth, there is something to be said about fast food when living an equally fast pace. However, I appreciate nothing more than a well-cooked and prepared meal. It's quite the quandary. So, I’ve come up with some recipes in which I make slow food, fast.
I’m one of those guys who doesn't like to complicate things in the kitchen especially when trying to get a meal onto the table quickly. These recipes were created for people like myself, who don't like to fuss but aim to please. Hopefully, you'll find these recipes easy to follow and quick to execute every weeknight, or otherwise.
Along with feeding my girls, I also enjoy entertaining at home. I love cooking for family and friends. And when serving for a big crowd, the more simple the better. Let’s remember, that easy doesn’t mean it can’t be delicious.
We hope that the most lasting impression you get from the recipes in which I share is that the finished product tastes good and something you could be proud to serve.
